Aloha Quick Bread

1/2 C. (1 stick) butter, softened

1 C. sugar

2 eggs

1 C. mashed banana

1/4 cup milk

1 T. grated orange rind

1 t. vanilla extract

1/2 t. almond extract

2 C. flour

1/2 t. salt

1 t. baking soda

1 C. flaked coconut

1/2 C. chopped macadamia nuts

1/2 C. crushed pineapple, drained

Preheat oven to 350° F. Grease a 9-inch-by-5-inch loaf pan or two small ones.

In a large mixing bowl, cream butter and sugar. Beat in eggs one at a time. Beat in banana, milk, orange rind and extracts. Combine flour, salt and baking soda. Add to wet ingredients and mix just until moistened. Fold in coconut, nuts and pineapple.

Turn into prepared pan. Bake 1 hour and 20 minutes or until a toothpick inserted near the center comes out clean. (Start checking after 1 hour.)

Serves 12.
