Apple Butterscotch Muffins

3  cups Self rising flour

1/4  cup Sugar

2 Eggs, beaten

1 1/2 cup Milk

1/3 cup Salad oil

6 oz. Butterscotch chips

1  cup Apples, peeled and diced

Combine flour and sugar. Combine remaining ingredients; add all at once to flour mixture, stirring only until flour is moistened.

Fill greased muffin cups 2/3 full.

Bake at 425° F. for 20 to 25 minutes, or until golden brown.
