Apple Muffins

Apple Muffins

1 1/2 C. brown sugar

2/3 C. oil

1 egg

1 C. buttermilk

1 t. soda

1 t. salt

1 t. vanilla

2 1/2 C. flour

1 1/2 C. diced apple

1/2 C. pecans

Combine oil, brown sugar and cream well. Add buttermilk and soda. Fold in flour, salt and vanilla. Add apple and nuts.

Have ready 2 cupcake pans lined with cupcake holders. Spoon batter into cupcake holders, about 2/3 full. Top with sugar mixture consisting of:

1/3 C. white sugar

1T. butter

1 t. cinnamon

Bake at 325°F. about 25 minutes.
