Banana Blueberry Mini-Loaves

1 cup sugar
1/2 cup oil
1 cup (2 medium) ripe bananas, mashed
1/2 cup low fat plain yogurt
1 teaspoon vanilla
2 eggs
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup fresh or frozen blueberries, do not thaw

Heat oven to 350ºF. Grease and flour bottoms only of three 6×3 1/2-inchloaf pans.

In large bowl, combine sugar and oil, beat well. Add bananas, yogurt, vanilla and eggs; blend well. Add flour, baking soda and salt; stir just until dry ingredients are moistened. Gently stir in blueberries. Pour into greased and floured pans.

Bake at 350ºF for 40 to 50 minutes or until toothpick inserted in center comes out clean. Cool 5 minutes; remove from pans. Cool completely.

Wrap tightly and store in refrigerator.

3 (12-slice) loaves.
