Cherry Bites Cookies
1 10 oz. jar maraschino cherries
1 1/2 C. flour
1/2 C. cocoa
1/4 t. baking soda
1/4 t. baking powder
1/4 t. salt
1/2 C. butter (softened)
1 C. sugar
6 oz. semisweet chocolate
1/2 C. sweetened condensed milk
Drain cherries and reserve juice.
Mix flour, cocoa, baking powder, soda and salt. Set aside.
Mix butter and sugar until fluffy. Add egg and vanilla, beat well. Add flour mixture, mix well.
Shape dough into 1″ balls. Place 2″ apart on a ungreased cookie sheet. Press down in center of each cookie with thumb. Place cherry in impression.
Combine chocolate and milk into small saucepan. Cook over low heat until chocolate is melted. Stir in 4 teaspoons of cherry juice. Spoon 1 teaspoon over each cherry, cover cherry completely.
Bake at 350° F for 10 minutes. Remove to cookie rack to cool.
