Chocolate Sandwich Cookies

2 18 1/4-ounce packages devil’s food cake mix

4 eggs

2/3 cup vegetable oil

8-ounce package cream cheese, softened

1/2 cup butter

3-4 cups powdered sugar

1/2 teaspoon vanilla extract

red and green food coloring

In a mixing bowl, beat cake mixes, eggs and oil. Batter will be very stiff. Roll into 1 inch balls; place on ungreased baking sheets and flatten slightly.

Bake at 350 degrees for 8-10 minutes. Cool.

In another mixing bowl, beat cream cheese and butter. Add powdered sugar and vanilla; mix until smooth. Divide mixture in half in separate dishes. Tint one dish red the other green. Spread bottom of half of the cookies with the cream cheese mixture. Top with remaining cookies.

Store cookies in the refrigerator.

Yield: 4 dozen.
