Arlene’s Raisin Puffs

1 box raisins, about 2 1/4 cups

1 1/2 C. water

1 1/2 C. shortening

2 1/4 C. granulated sugar

1 1/2 t. vanilla

3 eggs, beaten

5 1/2 C. flour

1 1/2 t. baking soda

3/4 t. salt

2 C. chopped walnuts

In a saucepan, combine raisins and water and cook over medium flame until water evaporates. Cool. Preheat oven to 350° F.

Cream shortening and 2 1/4 cups sugar until light and creamy. Add vanilla and eggs. Mix well.

In another bowl combine flour, baking soda, salt and nuts. Mix well and combine with creamed mixture. Carefully stir in raisins. Form into 1-inch balls and roll in granulated sugar.

Bake for 10-12 minutes.

Makes 8 dozen cookies.
