Ginger Drops Cookies
10 T. butter or margarine
1 C. sugar
1 C. dark molasses
2 jumbo eggs
4 1/4 C. flour
1 T. ground ginger
2 t. baking soda
1 t. salt
1 t. cinnamon
1/4 t. freshly grated nutmeg
1/4 t. cloves
Using an electric mixer, cream butter, sugar and molasses. Beat in eggs, 1 at a time. Beat in remaining ingredients, after you have sifted them together.
Preheat oven to 400°F. Line baking sheets with parchment paper. Form dough into 1 1/2 inch balls. Space 2 inches apart. Flatten slightly with the palm of your hand.
Bake 8 – 10 minutes. Cool on a rack.
