Frosted Ginger Cookies
1 cup white sugar
3/4 cup shortening
1 egg
4 tablespoons molasses
1 teaspoon cinnamon
2 1/2 teaspoons soda
1 teaspoon ginger
1/4 teaspoon salt
2 cups flour
For the frosting:
1 egg white
1 cup powdered sugar
Mix in the order given. Chill for 2 hours or overnight. Form into small balls and place on cookie sheet.
Flatten with the bottom of glass that has been dipped in sugar. Bake at 375 degrees for 10 minutes.
Frosting: Slightly beat 1 egg white and blend in 1 cup powdered sugar. Beat for 15 minutes.
Allow frosting to dry before storing.
