Grandma Beatty’s Molasses Cookies
1 C. sugar
1 C. shortening
1 egg
1 C. molasses
1 T. cinnamon
1 T. ginger
1 C. boiling water
1 T. soda
5 C. flour
Mix sugar and shortening together until light. Add the egg and molasses, mix. Add spices. Add soda to boiling water and mix with sugar and molasses mixture. Add flour and blend well.
Chill at least 3 hours. Roll out on floured board rather thick (about 1/4 inch). Cut with your favorite cookie cutter.
Bake at 400°F. about 9 minutes. Be careful not to overbake.
Cool and frost.
Frosting
2 C. confectioner’s sugar
1 t. vanilla
Mix milk in a little at a time to desired consistency. If very thin, it is will produce a glaze consistency.
