Pineapple Coffeecake

Pineapple Coffeecake

1 1/2 C. sugar

2 C. flour

1 t. baking soda

1/2 t. salt

2 eggs beaten

2 C. crushed pineapple slightly drained

1/2 C. brown sugar

1/2 C. chopped pecans

Preheat oven to 325° F. In a large mixing bowl, combine sugar, flour, soda, salt, eggs and pineapple. Pour batter into a greased and floured 7 x 11 pan.

In a separate bowl, combine the brown sugar and pecans. Sprinkle over the batter. Bake for 30 minutes.

Begin making topping about 10 minutes before cake is done.

Serves 8.
