Pumpkin Pine-Nut Bread

2 c Flour

1/2 c Oil

3 Eggs, beaten

1 1/2 c Sugar

1 ts Baking soda

1 ts Vanilla

3/4 c Milk

2 c Cooked pumpkin

1/2 ts Salt

1 1/2 c Pine nuts, roasted

Heat oven to 350 degrees. Mix dry ingredients in a large bowl. In a medium size bowl, mix eggs, milk, oil and vanilla. Mix well, then add pumpkin. Mix well and folk into dry ingredients. Add pine nuts.

Pour batter into 2 greased 5×9-inch loaf pans and bake for 45 minutes.

The pine nuts generally taste better if, before they’re added to the mix, you put them on a ungreased cookie sheet in the oven for about 10 minutes at about 350-400 degrees. It roasts them a little.

Yield: 2 loaves
