Rhubarb Nut Bread

1 1/2 Cups Brown Sugar
2/3 Cup Oil
1 Egg
1 Cup Sour Milk or Buttermilk
2 1/2 Cups Flour
1/2 Cup Chopped Nuts
1 Teaspoon Soda
1/4 Teaspoon Salt
1 Teaspoon Vanilla
1 1/2 Cups Diced Rhubarb

In a bowl, combine sugar, oil, egg, and the rest of the ingredients. Beat until well mixed. Sprinkle with topping mixture.

Bake in greased 9×5 loaf pan or 9×13 inch baking pan at 325ºF. for 1 hour. Cool on rack.

Yield:
“1 Loaf”
