Ricotta Cookies

1/4 lb. butter

1/4 C. ricotta cheese

1 t. vanilla

1 C. sugar

1 egg

2 C. flour

1/2 t. soda

1/2 t. salt

Soften butter. Blend with ricotta until creamy. Add vanilla and mix well. Add sugar gradually, and beat until well blended. Add egg and mix well. Slowly stir in dry ingredients until well blended.

Roll dough into 1″ balls and flatten slightly on cookie sheet or use a cookie press to create decorative cookies.

Bake in a 350° F. oven for 10 minutes or just until edges begin to brown (don’t over bake). Remove to cooling rack immediately.

Before baking decorate with goodies of your choice, M & M’s, chocolate chips, halved maraschino cherries, etc.
