Rocky Road Brownies

Nonstick cooking spray

6 squares (1 ounce each) unsweetened baking chocolate

1 cup (2 sticks) unsalted butter

1 1/2 cups sugar

2 teaspoons instant espresso powder or 1 to 2 tablespoons strong brewed coffee

1/2 teaspoon vanilla extract

3 large eggs

1 1/2 cups all-purpose flour

1/4 teaspoon salt

2 cups miniature marshmallows

1 cup walnut pieces

1/2 cup favorite caramel or chocolate sauce

Preheat the oven to 350 degrees.

Coat an 11-by-7-inch rectangular baking pan with nonstick spray and set aside.

In a glass mixing bowl, microwave the chocolate and butter together on high for 1 to 2 minutes, or until the butter is just melted. Mix it up to melt the chocolate completely. Stir the sugar and espresso powder into the melted chocolate until it is dissolved. Mix in the vanilla and eggs. Stir in the flour and salt just until combined. Spread the batter evenly into the prepared pan. Bake for 25 to 30 minutes, or until a wooden toothpick inserted in the center comes out clean.

Preheat the broiler.

Immediately sprinkle the marshmallows and nuts evenly over the brownies. Place under the broiler for 2 minutes, or until the marshmallows are light golden brown. Remove and cool to room temperature. Drizzle the caramel or chocolate sauce over the brownies before cutting.
