Sugar Plum Coffee Cake
For the cake:
2 C. all-purpose flour
1 t. salt
1 T. baking powder
2 C. sugar
1 t. ground cinnamon
1 t. ground cloves
3/4 C. vegetable oil
2 large jars (6 oz. each) strained plum or plum-apple baby food
3 large or extra-large eggs, beaten
1 C. chopped pecans
For the glaze:
1 C. plus 2 t. confectioner’s sugar
1 small jar (4 oz.) strained plum-apple baby food
2 T. milk
Preheat oven to 350 degrees. Grease and flour a 10-inch tube pan. In a large bowl, combine flour, salt, baking powder, sugar, cinnamon and cloves. Stir in the oil, baby food and eggs. Fold in pecans. Pour batter into prepared tube pan. Bake for 50-60 minutes, or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely.
In a small bowl, combine glaze ingredients until smooth. Drizzle over top and sides of cooled cake.
Makes about 16 servings.
