Amazing Chocolate Gelato
4 oz semisweet chocolate, cut into chunks
2/3 cup sugar
1/2 cup water
1/2 cup light corn syrup
3/4 cup unsweetened cocoa powder
1/2 tsp vanilla
2 cups water
Place the chocolate in a 2-quart bowl.
Place the sugar, water, and corn syrup in a small saucepan over medium high heat. Bring to a boil and allow to boil for 2 minutes
Pour the syrup over the chocolate and stir until it has melted and the mixture is smooth.
Sift in the cocoa and stir until the mixture is smooth.
Add the vanilla and stir in the water. Chill in the refrigerator until cold.
Pour into the container of an ice-cream maker and freeze according to the manufacturer’s directions.
