French Chocolate Ice Cream
1 cup sugar
3 egg yolks
1-1/2 cups milk
2 cups cream
1/3 cup cocoa
1 teaspoon vanilla
Beat milk and egg yolks together; blend in sugar.
Cook over medium heat, stirring constantly, until mixture is thick enough to coat the back of a metal spoon.
Remove from heat and gently sift the cocoa into the mixture. Beat well until blended. Cool.
Add cream and vanilla
Mix well and refrigerate overnight.
Freeze according to manufacturer’s directions.
Makes 1 quart
