Ice Cream Sandwiches

1-1/4 cup dry bakers cocoa powder

1-3/4 cup all purpose flour

2 tsp baking powder

1/4 tsp salt

Mix dry ingredients.

Cream together:

2-1/2 sticks soft butter

1-1/4 cup sugar

3/4 cup dark brown sugar

2 eggs

1/4 tsp vanilla extract
 
Add dry mix, and fold, adding:

12 oz. chopped semi-sweet chocolate

1/2 cup drained, chopped black cherries
 
Place on greased cookie sheet–(using an ice-cream scoop to measure 2 to a row 4 rows deep (these will spread to make BIG sandwich style cookies).

Bake at 350° F. for 10 minutes.

Remove from oven and cool for 2 or 3 minutes, then place cookies on cake racks to finish cooling.

Top a cookie with ice-cream, cover with another cookie, wrap in waxed paper and place in freezer in closed container till ready to eat.
