BBQ Beef Sandwiches (Crock-Pot)

1-1/2 lbs beef boneless round steak

1/2 tsp salt

1/4 tsp coarsely ground pepper

2 cups coleslaw mix or shredded cabbage

1 medium onion, coarsely chopped (1/2 cup)

1/4 cup uncooked regular long-grain rice

1/2 cup barbecue sauce

1/2 cup water

8 sandwich buns

Spray inside of 3-1/2 to 4-quart slow cooker/crockpot with cooking spray.

Trim excess fat from beef. Cut beef into 3-inch pieces. Sprinkle beef with salt and pepper. Mix coleslaw mix, onion, rice, barbecue sauce and water. Layer beef and coleslaw mixture in slow cooker.

Cover and cook on Low setting about 8 hours or until beef is tender and falls apart when stirred with a fork. Fill buns with beef mixture.

Makes 8 sandwiches

Notes: You can make this filling with tomato sauce instead of barbecue sauce if you want a milder flavored sauce.

Bone-in round steak can also be used instead on the boneless steak. Cut the steak into 3-inch pieces, leaving the bone attached to one of the pieces. The bone adds great flavor. Be sure to remove the bone before serving.
