Black Jack Burger
1/2 cup mayonnaise
1 1/2 tablespoons creole mustard
8 slices tomato
8 slices red onion, thin sliced
1 tablespoon vinaigrette dressing
1 1/2 pounds ground beef
1/4 cup Cajun seasoning mixture
4 slices jack cheese
4 sesame buns, split
In a small bowl mix mayonnaise and mustard until thoroughly blended. Cover and refrigerate. In a medium bowl toss tomatoes and onions in dressing to coat. Cover and reserve. Form beef into 4- to 8-ounce patties. Season patties on each side with 1 teaspoons Cajun seasoning. Grill over medium-high heat to 157ºF internal temperature. Top with 1 slice of cheese and return to grill briefly to melt. Spread 1 tablespoon of the mayonnaise-mustard mixture on each half of buns. Place 2 slices each marinated tomatoes and onions on bottom halves of buns. Top with grilled burgers to serve. Makes 4
