Chicken Avocado Sandwiches
1 medium avocado, peeled and cubed
2 tablespoons lemon juice
2 cups cubed cooked chicken
1 cup alfalfa sprouts
1/2 teaspoon salt
1/4 teaspoon lemon pepper seasoning
6 ounces cream cheese, softened
2 1/4 ounces sliced ripe olives
1/4 cup chopped walnuts
16 slices bread
In a medium bowl, toss avocado with lemon juice. Add chicken, alfalfa sprouts, salt and lemon pepper; mix gently.
In a mixing bowl, beat cream cheese until smooth.
Stir in olives and walnuts; spread on eight slices of bred.
Spoon about 1/2 cup chicken mixture onto each slice; top with remaining bread.
Yield: 8 servings.
