Santa Fe Chicken Avocado Melt
4 tbl Mayonnaise
2 tbl Freshly chopped cilantro leaves, divided
1/2 tbl Freshly squeezed lime juice
Salt to taste
Pepper to taste
2 slices Sourdough bread, lightly toasted (thick slices)
2 Cooked skinless, boneless chicken breast halves
1 Tomato, sliced
1 Avocado, peeled and sliced
3 oz Sliced LORRAINE cheese
Combine mayonnaise, 1-1/2 tablespoons cilantro, lime juice, salt and pepper.
Spread on top of bread.
Place chicken breast on bread.
Layer tomatoes, avocado and Lorraine cheese. Broil sandwich until cheese melts.
Sprinkle with remaining cilantro.
