Steak with Onion and Peppers on Pita Bread

1 – 1 1/2 lbs. flank steak

2 red peppers sliced in strips

2 onions sliced in strips

Marinade:

1 C. olive oil

1/3 C. red wine vinegar

1/3 C. soy sauce

6 garlic cloves chopped

1 t. basil

1/2 t. oregano

1 t. paprika

1 t. cumin

freshly ground black pepper

Mix marinade ingredients in a bowl. Marinate steak for 6 – 24 hours. Drain steak and discard marinade. Grill steak for 18 minutes or until desired doneness. Let set for 5 minutes before slicing into thin slices.

While steak is grilling, put vegetables on a grill tray and spray with vegetable oil. Cook for 15 minutes on grill or until tender.

Grill the pita bread a few minutes to warm. Split open and fill pocket with the steak and vegetables. Have mayonnaise and mustard on the side.

Serves 4 – 6.
