Tuna with Sun-Dried Cranberries and Lemon
1 can solid white albacore tuna
3 T. mayonnaise
1/2 fresh lemon
2 T. finely chopped yellow onion
1/8 t. sugar
4 T. coarsely chopped sun-dried cranberries
2 T. sunflower seeds
Pinch of sea salt
Squeeze the lemon and remove any seeds. Combine the lemon juice, sugar and salt with the onions, and set aside. Drain the tuna thoroughly. Mix together all the ingredients immediately before serving.
Serve on Lawash bread.
Makes 2 to 3 servings.
