Bacon Cheddar Puffs
2 eggs
1 cup finely grated sharp cheddar
2 teaspoons grated onion
1/2 teaspoon dry mustard
6 slices white bread
24 (1 inch) bacon squares
Preheat oven to 375° F.
In small bowl, beat eggs with fork. Add grated cheese, onion and mustard; stir until well blended.
Trim crust from bread; cut each slice into quarters, to make 24 squares. Arrange in shallow baking pan.
Spoon heaping teaspoonful of cheese mixture on center of each bread square. Top each with a piece of bacon.
Bake 15 minutes, or until bread is toasted and topping is slightly puffed.
