Bruschetta Recipe

This is perhaps one of my favorite appetizer recipes, my friend Deb taught it to me years ago. I have been making it ever since. It is essential to have good tomatoes with lots of flavor. This is the perfect appetizer to make when tomatoes are at their best right out of the summer garden.

This is one of those recipes that the recipe is just general guidelines as to how to make it. Depending on the tomatoes you use you may want more or less of any ingredient. To serve it, slice up a loaf of Italian bread. Put it in the oven at 375 for about 5 – 7 minutes, just until it starts to brown. Rub a garlic clove over the top of the bread.

Yield: 4 - 6

To make Bruschetta all you need is fresh tomatoes, garlic, olive oil, fresh basil and a dash of salt.

Ingredients

  • 3 tomatoes
  • 3 - 4 garlic cloves
  • handful fresh basil
  • 3 - 4 tablespoons olive oil
  • salt

Instructions

  1. Chop the tomatoes into bite size pieces. Using your hand squish up the tomatoes to release some of the juices. Mince the garlic and add it to the tomatoes. Chop up the fresh basil. Add the basil, olive oil and salt to the tomatoes. Taste to adjust seasonings.

      Make it when the tomatoes are at their peak. I also found a really good tomato in the middle of winter called Tasti-Lee, I was really surprised at how good they were. I got some coupons from them earlier this winter so tried them then.
