Cucumber Salad Hors D’Oeuvres
2 small pickling cucumbers (sliced very thin)
1/2 cup onion, chopped fine
1 Tbsp. rice wine vinegar
1/2 Tsp salt
1 Tbsp. oil
1/2 tsp. oregano
2 boxes Frozen Potato & Cheddar Mini Pierogies
Combine cucumber and onion.
Sprinkle with salt.
Let set 15 minutes, drain.
Combine vinegar, salt, oil and oregano.
Toss with cucumber mixture.
Drop Mini Pierogies into hot stovetop water for approximately 2-4 minutes, drain.
Top Mini Pierogies with cucumber and onion mixture to serve.
