Apple Raisin Upside-Down Cake
3 raw apples, diced
1 cup golden raisins
1/3 cup sweet butter, melted
1/2 cup brown sugar (packed)
1/4 cup chopped nuts (pecans)
1-1/2 cup all purpose flour
1/2 cup white sugar
2 tsp. baking powder
1/2 tsp. salt
2/3 cups milk
1 egg
1/3 cup Soft Crisco
1 tsp. pure vanilla extract
Mix apples, raisins, butter, brown sugar and nuts, simmer in heavy skillet for 10 minutes. Cool
Mix remaining ingredients and beat until well blended. Pour batter over apples. Bake at 350 for 50 minutes.
Turn cake upside down onto plate immediately (Hint. . . Leave for a few minutes so all the apples and sauce will fall on cake)
Serve warm with whipped cream.
