Pork Chops with Apples
4 semisweet apples (such as Cortland or McIntosh varieties)
6 medium-size boneless pork chops
2 tablespoons unsalted butter
1/4 cup brown sugar
1/2 teaspoon cinnamon
1 tablespoon salt
1 tablespoon finely ground black pepper
Heat oven to 350 degrees. Lightly butter a baking pan large enough to hold the chops, preferably in a single layer.
Prepare apples and mixture:
Peel, core and cut apples into ¼-inch slices. Keep in water to prevent browning. Combine butter, sugar and cinnamon in a bowl; mix until smooth.
Prepare pork:
Sprinkle salt and pepper on each side of chops. Brown chops over medium-high heat until evenly golden; set aside.
Place apples in greased baking dish. Sprinkle an even layer of brown sugar and cinnamon mixture over apples. Place browned pork chops over the apple mixture.
Bake:
Cover and bake in preheated oven 1 to 1 1/2 hours, until done through to taste.
