Herbed Arista of Pork

1 bulb garlic, peeled (about 12 cloves)

3 tablespoons fresh or 2 tablespoons dried rosemary

1 teaspoon salt

1 1/2 tablespoons coarsely ground pepper

2 tablespoons olive oil

1 bone-in pork loin roast (about 5 pounds)

Preheat oven to 350 degrees.

In food processor, combine garlic, rosemary, salt, pepper and olive oil; puree. Use a small, sharp knife to cut through pork (at least 3 slits per rib). Spoon some of the puree into each slit.

Place pork bone side down on roasting pan. Roast about 17 minutes per pound (about 11/2 hours total) until thermometer inserted in thickest part of meat reads 160 degrees F.

Remove pork from oven and let rest about 10 minutes before slicing. Serve hot or cold.

Makes 6 to 8 servings
