Caribbean Garlic Pork
1/3 cup garlic
1 teaspoon hot chile
1 teaspoon fresh thyme
2 teaspoons salt
1/4 teaspoon black pepper
2 teaspoons fresh lime juice
2 cups white vinegar
3 pounds boneless lean pork
1/4 cup peanut oil
Combine garlic, chiles, marjoram or thyme, salt, pepper, lime juice, and vinegar-mix well. Add pork cubes-mix well. Cover and chill for 2-4 days. Drain well and pat dry.
Heat oil in a large skillet, over a moderate flame.
Add pork; heat and stir to brown very well, until no longer pink in the center.
Serve hot, with or without creole sauce to the side with rice.
