Cotija Mashed Potatoes
2 lbs. Yukon Gold potatoes, peeled and quartered.
2-3 oz. butter
1 cup heavy whipping cream
4-6 oz. Cotija cheese, grated
kosher salt as needed*
white pepper as needed.
Simmer potatoes in salted water until fork tender.
Drain potatoes in colander and return to pan over medium low heat.
Add butter, cream and cheese. Combine thoroughly, first using a potato masher, then changing to a spoon or spatula as not to make it too smooth.
Season to taste with kosher salt and white pepper.
*Note: Cotija is a very dry and crumbly Mexican cheese. It’s salty, so be careful when adding the salt.
