Garden Meatloaf

1 small to medium onion, finely chopped
2 celery stalks, finely chopped
1 large carrot, finely shredded
2 garlic cloves, pressed
2 pounds lean ground beef
1/2 C rolled oats
2 eggs
3/4 C chili sauce, divided or ketchup
2 teaspoons thyme
1 teaspoon salt
1/4 teaspoon ground pepper

Preheat oven to 375°F.

Mix all ingredients except 1/2 cup of the chili sauce (ketchup if you do what I did) together well and shape into loaf in bread pan. Bake one hour. Add the remaining 1/2 cup of chili sauce (or ketchup) and return to oven for an additional 10 minutes. 

Let stand 10 minutes before serving.
