Honey Glazed Chinese Spareribs

2 pounds pork spareribs
1/4 cup + 1 tbl. soy sauce, divided
3 tablespoons hoisin sauce
3 tablespoons dry sherry, divided
2 cloves minced garlic
1/4 teaspoon five-spice powder
1 teaspoon minced fresh ginger
1 tablespoon cider vinegar
2 tablespoons honey
1 tablespoon sugar

Separate ribs, and trim off excess fat. Place ribs in heavy plastic bag.

For marinade, combine 1/4 c. soy sauce, hoisin sauce, 2 tbl. sherry, sugar, ginger, garlic and 5-spice in bowl. Mix well and pour over ribs.

Seal bag tightly and place in large bowl. Refrigerate for 8 hours or overnight, turning bag occasionally.

Foil line a large baking pan. Place rack in pan and place ribs on rack (reserve juice).

Bake at 350ºF for 30 minutes; turn ribs, brush with glaze and bake til tender when pierced (40 minutes more).

For glaze, combine honey, vinegar, 1 Tbl. soy, 1 Tbl. sherry in bowl. Mix and brush 1/2 of mix on ribs.

Broil about 4-6″ from heat til glazed (2-3 minutes). Turn and brush with rest of glaze, broil again.
