Italian Meatloaf

1 lb ground beef
1 tbsp oil
1 c. carrots
1/2 c. onion chopped
1/2 c. celery thinly sliced
1 can of beef broth
14 oz chopped Italian tomatoes with juice
1 c. water
1 tsp. worchestershire sauce
1/2 tsp salt
1/2 tsp. pepper
1/2 c. frozen peas
2 tbsp fresh parsley

Brown ground beef. remove from pan and set aside. Add to same pan, oil, carrots, onion and celery, cover and cook till veggies are soft about 5 min. I do longer. Gradually add beef broth and tomatoes, water, worchestershire sauce, salt and pepper. Return ground beef to pan bring to a boil and simmer about 25 minutes. Stir in frozen peas and parsley and simmer 5 more minutes.
