Meatballs
2 medium-sized potatoes
1/2 cup plain bread crumbs
1/4 cup Parmesan or Romano cheese, grated
2 eggs, lightly beaten
1 small onion, chopped finely
2 teaspoons chopped parsley
Salt and pepper, to taste
Dash nutmeg
1 pound lean ground beef
Approximately 1 cup additional plain bread crumbs
1/2 cup olive oil
Peel and quarter potatoes. Boil in salted water until tender. Press through a ricer or mash very well and cool slightly (leftover mashed potatoes work well). Add 1/2 cup bread crumbs, cheese, eggs, onion, parsley and seasonings. Add ground meat and mix well with hands.
Form into balls and roll in additional 1 cup bread crumbs. Brown in hot olive oil until well browned on all sides and cooked through the middle. Drain on paper towels and serve as is — without sauce.
Makes about 1 dozen meatballs.
