Mushroom Meat Loaf
1/2 C. chopped onion
1 garlic clove, chopped
1 T. butter
2 T. vegetable oil
4 oz. mushrooms, chopped
4 slices day-old Italian bread
1/2 to 1 C. milk
1 1/2 lbs. ground veal, beef, and pork mixture
1 1/2 t. salt
1/4 t. freshly ground black pepper
2 T. chopped fresh parsley
2 eggs, beaten
Breadcrumbs
Sauté onion and garlic in butter and oil about 3 minutes, until onion is transparent and soft. Remove onion and garlic and set aside. Sauté mushrooms in the butter and oil remaining in the pan for 3 to 5 minutes, drain and set aside.
Soak bread in milk until soft. Crumble bread into small pieces; squeeze out excess milk. When moistened and crumbled into pieces, bread should equal about 1 heaping cup.
Preheat oven to 400 degrees. Combine all ingredients, adding some bread crumbs if mixture is too soft. Form mixture into an oblong shape and place in a greased pan.
Bake, uncovered, for 45 to 60 minutes.
