Not-Your-Everyday Meat Loaf

1 large egg

3 large egg whites

1/3 C. minced fresh parsley

1/4 C. 1% milk

2 t. salt

1/2 t. ground nutmeg

1/2 t. fresh-ground black pepper

1 package (10 oz.) frozen chopped spinach, defrosted

1 lb. 93% lean ground beef

1 lb. 91% lean ground pork

1 C sliced green onions

1/2 C. dry bread crumbs

1/2 C. grated Parmesan cheese

Lightly spray a standard loaf pan with vegetable oil; set aside.

Place the oven rack in the lower-middle position and preheat oven to 350 degrees.

Over the sink, by the handful, squeeze the defrosted spinach to remove as much water as possible.

Add the egg, egg whites, parsley, milk, salt, nutmeg and pepper and drained spinach to a small mixing bowl and whisk until combined, set aside.

Pull apart the ground beef and ground pork with your hands as you add it to a large mixing bowl. Using a dinner fork, continuing breaking up and combining the beef and pork until almost combined. Add the onions, breadcrumbs, cheese and egg mixture to bowl and, using the fork, combine well.

Place the mixture into the prepared loaf pan and bake for 1 hour, 15 minutes or until a thermometer inserted into the center reads 160 degrees. Place the pan on a wire cooling rack for 15 minutes. Slice and serve.

Serves eight.
