Baked Pork Chops with Potatoes and Gravy

6 medium red skin potatoes — thinly sliced
1 medium onion, chopped
12 ounces zesty onion gravy
4 boneless pork loin chops (3 oz each)
1/2 teaspoon garlic pepper blend

Heat oven to 350ºF. Spray 13×9 inch baking dish with nonstick cooking spray. Arrange potato slices in sprayed baking dish; top with onion. Pour gravy over potatoes and onion. Cover tightly with foil. Bake at 350ºF for 30-35 minutes or until potatoes are tender. Meanwhile, sprinkle both sides of pork chops with garlic pepper blend. Spray large nonstick skillet with nonstick cooking spray. Heat over medium-high heat until hot. Place chops in pan. Cook 1-2 minutes on each side or until browned. Place pork chops over potato mixture. Cover and bake an additional 15-20 minutes or until pork is no longer pink. Serves 4.
