Sweet Potato Soufflé
3 cups of mashed, cooked sweet potatoes
1 cup of sugar
1/2 teaspoon of salt
2 eggs
1 teaspoon of vanilla
1/2 teaspoon of orange juice
1/4 cup of melted butter or margarine
1/2 cup of milk
Mix all ingredients together.
Pour into greased 2 quart baking dish and cover with topping.
Bake 40 minutes at 350ºF.
TOPPING: Mix together: 3 tbsp. flour 1/2 cup of chopped pecans 3 tbsp. melted butter
