Chess Pie Recipe
1 unbaked 9-inch piecrust (homemade or purchased)
1 1/2 C. sugar
3 T. melted butter
1 T. plain white cornmeal
1/3 C. buttermilk
1/2 t. salt
1 1/2 t. vanilla extract
Preheat oven to 375°F.
Prepare piecrust and place in pie pan.
In bowl, beat eggs with wire whisk. Add sugar, melted butter, cornmeal, buttermilk, salt and vanilla. Mix ingredients well and pour into unbaked pie shell.
Bake in preheated oven on bottom rack for 15 minutes, then reduce heat to 350°F. and bake 20 minutes more.
