Key Lime Pie

1¾ cup water, boiling
1 (8 oz.) JELL-O lime flavor gelatin
2 teaspoons lime zest
¼ cup fresh lime juice
2 cups vanilla ice cream, softened
6 ounce graham cracker pie crust

Stir boiling water into gelatin in large bowl at least 2 minutes until completely dissolved. Stir in lime juice and zest.

Stir in ice cream until melted and smooth. Refrigerate 15-20 minutes or until mixture is very thick. Spoon into crust.

Refrigerate 2 hours or until firm. Garnish with fresh lime slices and mint sprigs.
