Nantucket Cranberry Pie Recipe
First layer:
2 C. cranberries, chopped
1/2 C. walnuts, chopped
1/2 C. sugar
Mix those three ingredients together and put in bottom of a greased, 10-inch pie plate.
Second layer:
2 eggs
3/4 C. melted butter
1 C. sugar
1 C. flour
1 t. almond or vanilla extract
Stir together till smooth. Pour over the cranberry-walnut mixture. Bake at 350°F. for 40 minutes. Place an empty plate over top and flip out.
Serves 6 to 8.
Top with whipped cream or ice cream.
