Black Bean Salad

2 C. canned black beans, rinsed

1 C. chopped red onion

2 scallions, chopped

6 plum tomatoes, chopped

1 red bell pepper, chopped

1 yellow bell pepper, chopped

2 C. cooked corn

juice of 1 lemon

1 celery stalk, chopped

To make salad:

In large bowl, combine beans, red onion, scallions, tomatoes, peppers, corn, lemon juice and celery. Pour dressing over salad. Serve chilled or at room temperature.

Makes 8 servings.
