Black-Eyed Peas Salad
2 (15 oz.) cans black-eyed peas, rinsed and drained
1/2 c. onions, chopped
1/2 c. green pepper, chopped
1 small garlic clove, minced
2 T. sugar
1/4 c. vinegar
1/4 c. vegetable oil
1/2 tsp. salt
Combine peas, onion, green pepper and garlic. Stir together all remaining ingredients and pour over vegetable mixture.
Chill, covered, for at least 12 hours.
