Ham and Cheese Pasta Salad
I love pasta salads anytime of year but especially in the summer. This one can be put together in about 20 minutes including the cooking time for the pasta. I made this one to go with some Teriyaki Pork Tenderloin I made for sandwiches in the crock pot the other day. They paired perfectly together.
This pasta salad is so easy to put together. No real chopping of veggies in this one. You will need to cube the cheese but that’s about it. I used a corn salsa I got at Trader’s Joe and it added a touch of spice, beyond that you need frozen peas, sweet relish, ham cubes and cheddar cheese. It is dressed with mayonnaise but you could use yogurt or sour cream if desired to your tastes.
Ditalini pasta with ham, cheese, relish, corn salsa and peas with a mayonnaise dressing.
Ingredients
- 1/2 lb. ditalini pasta
- 1/2 cup corn salsa
- 1 cup frozen peas
- 1/3 cup sweet relish
- 4 oz. diced ham
- 4 oz. diced sharp cheese
Instructions
- Cook the pasta until ala dente, about 8 minutes in boiling water.
- While the pasta cooks, add the remaining ingredients to a bowl except for the mayonnaise. Stir.
- When the pasta is done, drain it well and rinse with cold water. Add to the salad bowl.
- Add the mayonnaise with the salt and pepper. Refrigerate until serving time.
