Salad with Blue Cheese and Dried Cherries
1/2 head Romaine lettuce torn into bite size pieces
1/2 head of iceberg lettuce torn into bite size pieces
1/2 C. blue cheese crumbled
1/2 C. dried cherries
1 small red onion thinly sliced
1/2 C. walnuts chopped
Dressing:
2 T. Dijon mustard
1/2 C. olive oil
1/2 C. white wine vinegar
2 – 3 cloves garlic minced
Whisk dressing ingredients together. Combine salad ingredients in a large bowl. Lightly toss with dressing and serve on individual salad plates.
