Spinach Salad with Honey Pecan Dressing
For the dressing:
1/3 cup Canola oil
3 Tbs. honey
1 Tbs. lemon juice
2 tsp. vinegar
1 tsp. soy sauce
1 tsp. dill
1/3 cup pecans
2 Tbs. warm water
Grated lemon rind
2 cloves garlic
Combine in blender until smooth. Chill thoroughly.
For the Salad:
Spinach leaves
Fresh Strawberries, sliced
Fresh mushrooms, sliced
Slices of bacon, cooked and crumbled
Arrange on plate and drizzle dressing over.
