Summer Vegetable Salad with Feta Cheese
2 garlic cloves
salt and pepper to taste
1 t. grainy mustard
6 T. olive oil
2 T. raspberry vinegar
1 small onion slivered
1 C. cauliflower florets
2 C. snow peas stemmed
1/2 C. zucchini diced
1 red bell pepper diced
15 cherry tomatoes halved
12 large mushrooms sliced
12 large pitted olives sliced
6 sprigs fresh thyme minced
12 oz. feta cheese crumbled
2 C. baby spinach leaves washed
In a large salad bowl, mash the garlic with the salt and pepper. Beat in the mustard. Add the vinegar and whisk in the oil. Add all the veggies except the spinach. Toss in the thyme and toss the salad well.
Add the feta cheese and toss about 2 times. Cover with the spinach leaves and chill for at least 30 minutes. Toss the salad before serving.
